I thought this was very weekend appropriate, this was possibly the best cheat meal that I’ve ever eaten! Best of all someone else made it for me. People don’t cook for me very often as I think they are scared of disappointment…or its because they are so confused about what I eat   : ) So if you’re looking for a delicious weekend BBQ treat try this meal out!

Grilled Caesar, Double Stuff Potatoes & Grilled Chicken

Grilled Romaine:

  • 1  romaine lettuce hearts, sliced in half with stem still attached
  • 1 teaspoon olive oil
  • 2 teaspoons lemon juice
  • salt and pepper
  • 2 -4 tablespoons prepared caesar salad dressing
  • anchovy (optional)
  • fresh shaved paremesan cheese, to taste (optional)
  • 1/2 lb grilled chicken breast, well seasoned (optional)

Directions:

  1. Preheat grill to medium high.
  2. Drizzle oil and lemon juice over romaine and season with salt and pepper.
  3. Place on grill and cook for 1-2 minutes per side.
  4. Place cooked romaine on 2 plates and drizzle with dressing top with anchovies, cheese and or croutons. Enjoy!
