Egg & Veggie Frittata

Looking for a creative and fancy way to make eggs? Try making an egg & veggie frittata!  Super easy and it’s delicious.

Ingredients

6 Eggs, whisked

4oz Browned Sausage, Ground Buffalo, Bacon, or other meat

Veggies*

1 tsp. Coconut Oil, for greasing baking dish

*Yams and/or potatoes should be par cooked; any other veggie can be sliced small…think pea or dime-sized.

Directions

1.    Preheat oven to 350F.

2.   Grease baking dish with coconut oil.

3.   Evenly distribute meat in dish

4.   Add veggies, if using.

5.   Top the meat and veggies with whisked eggs, filling just over 3/4 of the way full.

6.   Transfer the baking dish into the heated oven and bake for 12-15 minutes, it might need a little longer it all depends on your oven
