Best Christmas veggies! This is one of my favorite veggie recipes. It’s very delicious with roasted chicken or turkey.

Bacon and Brussels Sprouts

1 pound brussels sprouts
1 package of bacon into small pieces
1 onion, chopped
1/4 cup chicken stock
Sea salt and pepper, to taste

Put a large pot of lightly salted water on the stove to boil. Chop the stems off the brussels sprouts and cut each one in half.

Chop up onion and place in frying pan over medium heat. Sauté onions until transparent.

Cut the bacon into small bite sized pieces  and add them with the onions.

Once the water is boiling, add the brussels sprouts. Cook till they are slightly soft. Then move them to a strainer to drain in the sink.

Add the brussels sprouts to the sauté pan with the bacon and onions. Stir in the chicken stock and salt and pepper to taste. Cook over high heat for 3- 5minutes till brussel sprouts are slightly brown.  

Remove from heat, move to serving dish and serve!
