Egg Cups

This is a quick and easy breakfast idea. Make as many as you want and just keep them in the fridge ready for those grab and go morning!

Ingredients

  • 2 red peppers
  • 1 onion
  • 1 table spoon garlic
  • ham or bacon- how every much you would like
  • 1 bunch spinach
  • 12 eggs
  • 1 tsp coconut oil

Directions:

  1. Heat oven to 350°F
  2. Rub coconut oil on inside of each muffin tin.
  3. Saute onions, red pepper, garlic, ham, and spinach in a pan. Cook till spinach is done.
  4. Place veggies, and ham in bottom of tin.
  5.  Crack an egg over the top of each and season with salt and pepper.
  6. Place in oven and bake for 10 minutes or until the egg is cooked.
