Spinach and Mushroom Frittata


12 eggs, whisked together

1/2 red onion, diced

1 1/2 cups fresh spinach

4 green onions

1 cup mushrooms, diced

Sea salt and black pepper to taste

2 tablespoons coconut oil

**I added a bit of goat cheese**

Heat the butter or coconut oil in a large pan.  Add the onions and saute until they begin to turn brown and caramelize.  Add the spinach and mushrooms and saute for another 4-5 minutes.  Spread the veggie mixture evenly over the bottom of the pan. Whisk the sea salt, pepper, and green onion into the eggs and gently pour over the veggie mixture. Cook for 3 mins and then place in a preheated oven at 350 for 10mins. serve and enjoy!
